8oz Butter
8oz Self-Raising Flour
8oz Sugar
8 tbsp Icing Sugar
4 Medium Eggs
3 Lemons
Milk
Pre-heat the oven to 180°C
Cream the Butter and Sugar together
Alternate incorporating Eggs and Flour
Zest 3 Lemons and add to mix
Add a splash of milk and mix until just incorporated, do not over-mix
Bake in oven for 20-25 minutes until golden brown and a cocktail stick comes out clean
Make icing by juicing the Lemons and adding Icing Sugar
Allow to cool for 10 minutes
Using a cocktail stick, poke holes uniformly across the cake
Pour icing over cake and allow to cool
