Chicken Satay


Chicken Satay
For two people

Ingredients

1 Chicken Breast
200ml Coconut Milk
3 tbsp Smooth Peanut Butter
A handful of Peanuts
2 Spring Onions
Sweet Chilli Sauce
2 Garlic Cloves
Soy Sauce
1 tsp Curry Powder
Rice
Broccoli
Green Beans
Salt
Pepper

Method

Chop the chicken breast into 2cm cubes and chop the peanuts, spring onions and garlic
Add to a frying pan along with the curry powder, salt and pepper
Once the chicken is seared add the peanut butter, coconut milk and a splash of soy sauce and sweet chilli sauce
Fry together until the chicken is fully cooked
Serve with rice and vegetables
